Edamame Salad


  • 1 10 oz bag frozen edamame
  • 1/2 cup dried cranberries
  • 1/2 cup crumbled feta cheese
  • 2 T shredded fresh basil leaves
  • 2 T olive or canola oil
  • Freshly ground black pepper, to taste

Cook the edamame according to package directions, either on the stove top or in the microwave. Drain and run under cold water to cool. Put the cooled edamame into a medium bowl, add the remaining ingredients and gently stir to combine. Serve chilled on a bed of arugula.   4-6 servings.
