Cinnamon Apple Burrito


  • 3 apples
  • 3 teaspoons sugar
  • 1 teaspoon cinnamon
  • Just a little water (or apple juice/cider)
  • 1 handful of raisins or dried cranberries, optional
  • 4 (7-8 inch) flour tortillas
  • 1 T melted butter
  • Sugar for sprinkling

Peel, core, and chop apples. Put apples, sugar, cinnamon and water/juice or juice into medium sauce pan. Cook covered over medium heat for 20-30 minutes, stirring occasionally. Stir in raisins or dried cranberries and cool slightly.

Preheat oven to 375 degrees. Line a medium size baking sheet with parchment paper or foil brushed lightly with a bit of the melted butter. Place a tortilla on the baking sheet and spoon ¼ of the applesauce down the center, leaving a generous 1 inch border at each end. Fold the ends over the filling, then fold over one of the sides to enclose the filling like an envelope. Brush a little water over the remaining edge and fold to close. It should now be seam side down the baking sheet.   Repeat for remaining tortillas. Brush each tortilla generously with the melted butter and sprinkle with sugar. Bake for 20-25 minutes until the tortillas are a rich, golden brown. Cool on a rack for at least 20 minutes before serving. Makes 4-8 servings
