Black Bean Salad


  • 1 14 oz can low-sodium black beans, rinsed thoroughly & drained
  • 2 cups fresh corn or frozen corn, thawed
  • 1 red bell pepper, seeded & chopped to pieces the size of the corn & beans
  • 1.5 ounces of canned green chilies, chopped
  • Juice of 3 limes, or to taste
  • 1/4 cup chopped cilantro
  • 1-2 cloves garlic, chopped, to taste
  • Salt & pepper to taste

Gently combine all ingredients in a medium bowl, cover and refrigerate until cool. 10 servings
