Black Bean Hummus


  • 1 15 oz can black beans, drained and rinsed
  • 1/2 t minced garlic
  • 1/4 cup silken tofu
  • 2 T tahini
  • 1 t ground cumin
  • 1 T olive or canola oil
  • Juice of 1 lime (about 1 1/2 T)

Put all ingredients into a food processor and process until mixture is smooth. Season to taste with salt and freshly ground pepper. Serve in a bowl with whole wheat pita chips, sprinkled with paprika. Makes 1 1/2 cups.
