Ingredients:
- 1 14 oz can low-sodium black beans, rinsed thoroughly & drained
- 2 cups fresh corn or frozen corn, thawed
- 1 red bell pepper, seeded & chopped to pieces the size of the corn & beans
- 1.5 ounces of canned green chilies, chopped
- Juice of 3 limes, or to taste
- 1/4 cup chopped cilantro
- 1-2 cloves garlic, chopped, to taste
- Salt & pepper to taste
Gently combine all ingredients in a medium bowl, cover and refrigerate until cool. 10 servings
